My white choc won't melt!

Hi all, I hope this question hasn't been asked before, I couldn't find a previous post to answer my question so I thought I'd ask all you cake experts. I am making a trial white choc baileys mud cake for an engagement cake I have to do next week. I was just wondering why the white choc in the liquid mix isn't melting properly. I have no trouble with dark choc melting. After persisting for about 20mins I ended up putting it through a strainer to get the little lumps out. Does it just take ages to melt or is it the quality of the white chocolate? I really want to fix the problem before next week.

how are you melting it? in the microwave?

I melted mine on the stove with a pot of boiled water and the white choc in a glass bowl over the top.

I was melting it in the butter, water and sugar in a saucepan, like the recipe says.

It does take longer than dark/milk chocolate.If you warm the water it will speed it up but it will melt, you shouldn't have to strain it. Don't let the mix get too hot though.

If you mix gets too hot during the melting the chocolate will seize and will stay in lumps- not fully melted.
Make sure you melt the chocolate in the butter mix on a very low heat stirring almost constantly

I found if the chocolate is old it will seize and not melt either. There is nothing you can do to melt it once it has seized :( I did chocolates for the family for Christmas one year and bought a 5 kg box of chocolate and discovered too late that it was old and seized up, and wouldn't melt no matter what I did.
